Fool Proof Blackberry Jam Whipped Cream
If you're familiar with Roots Jam than we bet you've been eating it with wild abandon on toast ever since you discovered the power of real fruit, just enough sugar, and that something extra. Well put down the toast because we have news for you:

Blackberry Earl Grey Fool
We love bringing you tried and true flavors with a twist, so when it came to developing a blackberry jam we racked our brains trying to come up with the perfect complimentary note. We had already found success with our Raspberry Vanilla, and Blueberry Lavender, so when we discovered the delicate and well rounded flavor that Earl Grey Tea lends to blackberries we were hooked.
If you've never heard of a "Fool", and I mean culinarily, than allow me to introduce you to your new best friend. A Fool is the easiest dessert you will ever make and your guests, or family (or cat? I'm not sure who you're dining with...) will be so impressed we won't blame you for keeping your lips sealed when they ask you how you made this delectable dish. Let them believe your culinary skills are next level, we won't tell!
A Fool is simply cooked and reduced fruit, or in this case Jam, folded into a custard or whipped cream. Custard if you are feeling like doing ANY work, and whipped cream if you aren't. We bet you aren't. And that's okay, because in some ways the whipped cream version is better! It's light and summery and at the end of a hot day on the heels of a neighborhood barbecue you don't need anything heavier than whipped cream.
Makes 4 Servings
1 cup Heavy Whipping Cream
1 to 2 tbl Sugar
1/2 tsp Vanilla
1/2 Jar of Roots Blackberry Earl Grey Jam
Fresh Blackberries to top
*1 tbl loose leaf Decaf Earl Grey Tea (optional)
Whip up your Cream, Sugar, and Vanilla until you get some stiff peaks. If you are into a little less sweet you can cut down your sugar to 1 Tbl: remember you'll be adding some more sweetness with the jam.
Fold your Roots Jam into your whipped cream. You can fold it in until it's evenly distributed, or you can fold it in so it's streaked with jam which looks quite lovely.
Spoon into four bowls and top with your fresh Blackberries and... voilà!
*If you really want to make the Earl Grey Flavor POP mix your heavy whipping cream with a tbl. of loose leaf decaf Earl Grey Tea the night before to infuse your whipped cream (keep it in the refrigerator!). Strain out the tea particles before whipping with sugar and vanilla, and folding in the jam. Yummmmmmmmm
